Ingredients

  • 2 cup cooked rice
  • 2 whole egg
  • 1.5 cup mixed vegetables
  • 1 tbsp soy sauce
  • 1 tsp sesame oil

Substitutions

  • Use tofu instead of egg for a vegan version.
  • Any leftover vegetables work here.

Steps

  1. Scramble the eggs in a hot skillet and remove them.
  2. Cook the vegetables briefly, then add rice.
  3. Return the egg, season with soy sauce and sesame oil, and stir-fry until hot.

Storage and reheating

Storage: Keeps 3 days in the fridge.

Reheating: Microwave or reheat in a skillet until piping hot.
