Ingredients

  • 1 tbsp olive oil
  • 1 whole onion
  • 2 clove garlic
  • 1 can crushed tomatoes
  • 1 can white beans
  • 2 cup vegetable broth

Substitutions

  • Use chickpeas instead of white beans.
  • Add a spoon of cream if dairy-free is not needed.

Steps

  1. Saute onion and garlic in oil until soft.
  2. Add tomatoes, beans, and broth.
  3. Simmer for 12 to 15 minutes and mash some beans for body.
